About the role

The Garde Manger is an entry level culinary position reporting directly to the Garde Manger Sous Chef. This individual is responsible for preparing and/or presenting all cold food items such as salads, cold soups, cold meats, ice carvings, vegetable displays, charcuterie offerings, and garnishes for buffets and banquets, ensuring that food quality consistently exceeds OKANA standards. This is a hands-on role that requires working side by side with the Garde Manger team and collaboratively with the other culinary operations to ensure smooth kitchen operations and exceptional customer experiences.

What you will be doing:

  • Maintain work areas clean and organized.
  • Monitor the presentation and portioning of food according to standards.
  • Monitor the quality and consistency of all food served from the lines.
  • Report all unsafe conditions immediately.
  • Set up, restock, maintain and clean food preparation areas.
  • Display knowledge in sanitation and sanitary food handling.
  • Ensure the special of the day is completed in a timely fashion.
  • Prepare food in accordance with working menus, recipe cards and photos.
  • Attend all mandatory meetings.
  • Complete other duties as assigned by supervisor to include cross training.

What are we looking for?

What you bring to the role:

  • High School diploma required; culinary education/certifications are preferable.
  • 2 years of experience in high volume food preparation and 1 year in a full-service hotel or resort.
  • Leadership skills to guide and direct the team during designated shifts.
  • Versatile background of various preparation methods, including use of ingredients, styles, equipment, and procedures.
  • Keen sense of quality and cost control that impact financial results.
  • Knowledge of food safety regulations and best practices; current with all relevant food certifications.
